Our Story

When I moved to Denver from Poland 10 years ago the first thing I noticed was a lack of Eastern European restaurants: most notably Polish ones.

When I learned that pierogies were so popular on the eastern side of country in Chicago, New York, and Pittsburgh I knew that the people of Colorado needed to be introduced to Polish cuisine: especially pierogies. Pierogies are delicious dumplings with a wide variety of fillings like potato and cheese, pork, and sauerkraut with mushroom; of course these are just examples.

I first sold pierogies starting in 2007 in my first restaurant: Kinga`s Lounge. After spending 4 years building experience and refining my recipes I opened Polished Tavern in 2011 with my friend Slawek Golabek, the first Polish restaurant in heart of downtown.

A year after opening Polished Tavern I decided that I could expose more people to pierogies by participating in the local farmers’ markets. I’ve been doing that for three years now, and have had great success. Street food is becoming more and more popular here in Colorado, in Denver especially. After seeing the rise of the food truck I know that this is another way to introduce as many people to polish food as possible. Pierogies Factory and the truck that goes with it were born from this idea.

Now a new exciting chapter is opening for Pierogies Factory. In March of 2015 I will be opening my first fast casual restaurant to help expose even more people to Polish cuisine. I’m truly looking forward to having you join me for this new journey and know that that it will be as exciting for you as it is for me.

Armed with my Grandma`s recipes and my families help, I`m more happy than you know that you can try Polish food, and be a part of my dream!
